For this week’s frugal diary, I’m posting a recipe I make all the time, which is cheap, easy, and healthy! It’s a triple threat!
You can buy quinoa in bulk, and kale costs about $.99/bunch at Ralph’s grocery store, which usually makes 2-3 dinners. I adapted the recipe from here, and the dressing calls for less dijon and lemon juice and more EVOO, but this gal is watching her waistline, so I made it more fitting-into-my-jeans-friendly.
OK I know what you’re thinking:
- “Ew, kale and quinoa? Gross!” Actually, this kale skeptic actually finds it VERY delicious.
- “OMG you are SOOOOO LA to eat that!” True. I should eat more pizza.
But seriously, try it! And while you’re at it, notice the amaze-ballz production value of this video! I mean…top fricken notch stuff here folks. I should get a job in video. Oh, wait.
Also notice the bang-up job that my hair and makeup team did as well. OK I’ll stop now.
OMG peeps these FD (that’s frugal diaries to the kewl kids out there) take forevz (that’s forever for the pathetically over 40-somethings trying to be cool people out there) to make. So there is a good chance somewhere in this whole process I spelled something wrong. Except for forevz…I meant to do that!
